With this recipe, you can make amazing vegetarian cutlets, which will take you back to the Indian Coffee House days. I really dig the cutlets (they have non-vegetarian cutlets too) and Mutton Omelette of the coffee house.
Here is the recipe for vegetarian cutlets. Simple and easy.
Ingredients:
4-5 Boiled Potatoes chopped
1 Onion, finely
2 Carrots, grated
1 Beetroot, grated
1 Green Chilli, chopped fine
1 tsp Red Chilli powder
A pinch of turmeric powder
11/2 tsp Coriander Powder
1 tsp Garam Masala
Breadcrumbs or Semolina (Suji)
Maida
Salt and Oil
Method:
Heat oil in a kadai or wok. Add the chopped onion and saye till the colour changes. Add the grated carrots, beetroot and green chilli and give it a good stir. Add a tsp of salt and all other dry spice powders and garam masala. Stir till the veggies are cooked. Make sure that there is no water or excess moisture in the kadai. Cool it to room temperature.
Mash the boiled potatoes in a large bowl. Add the cooked veggies in the bowl and mix well. Make patties of desired shape.
Heat oil for deep frying (or shallow frying) in a kadai. Take a patty, dip it in a slurry of maida and then coat it with breadcrumbs (or Suji). Try to us both your hands, one for dipping and other for coating with breadcrumbs to get a even coating on the patties.
Deep fry the patty in hot oil, till it’s golden brown. Repeat the process to fry all the patties.
Serve the hot veg cutlets with onion and carrot salad and tomato ketchup.
