Salmon is so incredibly easy to make in the instant pot. To make this even simpler, we are using frozen salmon! This is a complete meal and it reheats beautifully. This recipe is perfect to make for your Sunday meal prep and portion out for work or school. The sauce is super delicious and is perfect as a dressing for the salad and served over the warm salmon. If you are pressed for time, substitute your favorite miso ginger dressing, though I highly recommend making this sauce! This recipe makes 2-3 servings. What are your favorite tasty recipes? In a stainless steel container (or double layer foil packet) add salmon (must be frozen). Pour sauce over the salmon and coat each piece well. Pieces may overlap slightly. Cover. Add couscous, water and salt to the INSTANT POT. Place trivet inside of the pot. Add stainless steel container on top of trivet (or foil packets). Making sure silicone ring is on, close the lid. Set the INSTANT POT to HIGH pressure for 4 minutes. Allow 8 minutes of natural pressure. Perform a quick release. Remove stainless steel container. Remove trivet. Flush couscous with a fork. Portion out salmon for 2-3 servings. Serve with couscous and mixed greens. Spoon sauce over the salmon and greens. Top with sesame seeds, squeeze of lime and optional pineapple. If meal prepping, store in container with sauce separately. Remove mixed greens and pineapple to heat. Then toss everything together. Enjoy!
