Coconut shrimp curry | Easy At Home Recipes

Ingredients: * 1 lb. large shrimp, peeled and deveined * 1 tbsp. vegetable oil * 1 medium onion, finely chopped * 2 cloves garlic, minced * 1 tbsp. fresh ginger, minced * 1/2 lime * 1 tbsp. curry powder * 1 cinnamon stick * 1tbsp garam masala * 1/2 tsp. ground cumin * 1/2 tsp. ground parsley * 1/4 tsp. turmeric * 1 can (14 oz.) coconut milk * 1 can diced tomatoes * 1/4 cup chopped fresh cilantro * Salt and pepper to taste * Cooked rice, for serving Instructions: 1. To skillet add 1/4 cup vegetable oil and cook shrimp 50% through. Add lime juice and red pepper flakes and cook for 1 more minute then remove and place to the side. 2. To same oiled skillet, add the chopped onion, garlic, and ginger and cook for 2-3 minutes, until the onion is soft and translucent. 3. Add the curry powder, cumin, garam masala, cinnamon stick, and turmeric and cook for another 1-2 minutes, stirring constantly. 4. Pour in the can of diced Tomatoes and allow to simmer for 1 minute. 5. Remove cinnamon stick. 6. Pour in the coconut milk and stir to combine. 7. Bring the mixture to a simmer and cook for 5-7 minutes, until the vegetables are tender. 8. Season the curry with 1/4 tsp of curry powder, chili powder, pepper, parsley, and turmeric. 9. Add the peeled and deveined shrimp to the pan and cook for 3-4 minutes, until they are pink and cooked through. 10. Serve the coconut shrimp curry over cooked rice, garnished with additional cilantro if desired. Enjoy your delicious coconut shrimp curry!
