Happy Canada Day everyone! To celebrate, here are a batch of my ICONIC spiced walnut butter tarts! There’s nothing more Canadian than butter tarts… except me 😂🇨🇦. These consist of a buttery and flaky crust with a butter tart filling spiced up with brown butter, cinnamon, vanilla extract and toasted walnuts! This is definitely not the first or last time I’ll be making these, that’s for sure. • • • #shorts #viral #fyp #recipes #bake #baking #food #foodie #diy #canadaday #pies #recipe #howto _____________________________ ⭐️•Makes 6 Mini Tarts•⭐️ • • 🥧•Crust•🥧 ➡️ 2 1/2 Cups (300g) Flour ➡️ 1 1/2 Tablespoons Sugar ➡️ 1 1/4 Teaspoons Salt ➡️ 3/4 Cup (170g) Cold Unsalted Butter ➡️ 1 Tablespoon (15mL) White Vinegar ➡️ 3-5 Tablespoons (47-78mL) Ice Water 🍁•Filling•🍁 ➡️ 2/3 Cup (167mL) Golden Corn Syrup ➡️ 3 Eggs (Pre-Whisked) ➡️ 10 Tablespoons (142g) Unsalted Butter ➡️ 2/3 Cup (147g) Brown Sugar ➡️ 1 3/4 Teaspoons Vanilla Extract ➡️ 1 1/2 Teaspoons Cinnamon ➡️ 1/2 Teaspoon Salt ➡️ 1/2 Cup (50g) Toasted Walnuts ➡️ Whipped Heavy Cream (Sweetened To Liking) ➡️ Chopped Toasted Walnuts • • ⭐️NOTE: you can also cook the filling over a double boiler until thickened then pour it over the fully baked shells (I did this with the tart I used for photography). If you’re doing this, bake the pastry shell for 10-15 minutes longer. • • 1️⃣. For the pastry, mix flour, salt and sugar. Then cut in the butter until you have small thin smears. Add vinegar & ice water then mix until it comes together. Roll this 1/8 inch thick then cut out discs 1 inch larger than the diameter of your mini tart pans or muffin pans then gently tuck the dough into your pan. 2️⃣. Dock the shell with a fork, chill for 30 minutes, then bake at 350 Fahrenheit for 20 minutes. 3️⃣. For the filling, begin by cooking the butter until browned then add the cinnamon. Allow to cool while you whisk together the eggs, golden corn syrup, vanilla, salt, and brown sugar. Mix in the brown butter mixture then add the toasted walnuts. 4️⃣. Spoon overtop the crust then bake at 200 Fahrenheit for 20 minutes, increase heat to 350 Fahrenheit then bake for about 15 minutes more. 5️⃣. Optionally top with whipped cream and additional walnuts. ______________________ 💡•Extra Tips & Advice•💡 ➡️ Refrigerating your pie crust ensures the fat stays nice and cold and doesn’t sink when it bakes. If you are worried about shrinkage, blind bake your crust by lining the unbaked crust with parchment paper, filling it with pie weights, then baking. ➡️ It’s super important to pre-bake the crust to ensure it’s fully cooked the moment the filling sets. Remember, the crust takes a lot longer to cook than the filling. ➡️ Adding the cinnamon into the warm brown butter blooms the flavour and adds dimension to the filling! ➡️ Make sure the walnuts are toasted so Duff Goldman is happy with you 😉😂. ➡️ The salt in both the crust and filling helps to balance the sweetness of the butter tart and adds a nice contrast in terms of the flavour! ➡️ It’s so important to bake at 200 Fahrenheit for 20 minutes first because it sets the filling just enough to hold itself together without bubbling.
