Pimp My Chips - Episode 19
These were delicious but they were always going to be!Ingredients:
Fajitas:
2 Chicken breasts
1 onion
1/2 green pepper
1/2 yellow pepper
1/2 red pepper
1 tsp ground coriander
1/2 tsp salt
1/2 tsp pepper
1/2 tsp chilli powder
1 tsp cumin
2 tsp minced garlic
1 tbsp olive oil
Guacamole:
1 avocado
1 tsp garlic
1 juice of a lime
1/2 tsp salt
Salsa
1 tomato
1/2 onion
1/2 jalapeño
1 tbsp chopped coriander
1 tsp cumin
1 juice of a lime
1/2 tsp salt
Garnish:
Soured cream
Jalapeños
Chopped coriander
Mix ground coriander, a pinch of ground cumin, 2 crushed garlic, olive oil, and chilli powder in a bowl with a big pinch each of salt and pepper.
Add mixture to 2 finely sliced chicken breasts in a bowl and let that marinate for at least 30 minutes.
Add the marinated chicken to a hot pan with olive oil and cook then add sliced onion and peppers and leave tp soften with a lid on.
Prepare you guacamole by adding avocado, lime, garlic and salt to a bowl and mash well.
Prepare your salsa by add chopped tomato, onion, jalapeños, coriander, cumin, lime juice and salt to a bowl
Now for your chips, mic together salt, garlic granules, chilli powder, paprika and cumin. Add to your chips and give them a toss.
Add you chips to a bowl and top with fajita mix, guacamole, soured cream, salsa, jalapeños and chopped coriander.
